This is so true, but honestly the fault lies with the students more than anything. Having been through UT's film program, I can say that the tools are there for the students to learn audio, but very few actually take advantage of that. The production audio class they offer actually prepares you pretty well (I'm a working freelance sound guy now) and the gear available is actually better than most of the camera packages they have (SD gear, 416's, lectros). Most students choose not to take the class, however. I'm friends with one of the professors of one of the upper level film classes and he had me come in and do a guest lecture on audio; 6 students showed up.
