My co-presenter colleague Jason Nicholas and I are thoroughly delighted to announce that Part 1 of our 'Apple & Biscuit Show' podcast interview with Oscar-winning Production Sound Mixer Simon Hayes, is now available on all the usual podcast platforms; or better still, subscribe with us directly and help us to build our audience and continue to attract such important guests. (It's free...)

Hear / subscribe / here: soundproducer.com.au/the-apple-biscuit-show-episode-007-signal-to-noise-is-everything-simon-hayes/

In this episode, we talk with Simon about his demanding work on location film sets and deep-dive into Simon’s philosophy and approach to modern location recording techniques. We discuss the importance of a fully-digital signal chain, the understanding with directors he establishes at the beginning of each project and the very different considerations he applies to recording and mixing musicals such as Les Misérables, Cats and Wicked or action films such as James Bond’s No Time To Die (incidentally this is episode number 007 for us...), X-Men: First Class and Guardians of the Galaxy.

Simon talks about the refreshing nature of shooting low-budget, single camera productions epitomised by the spirit of his early work on Lock, Stock and Two Smoking Barrels.

This is a compelling and unique insight into film sound for experts, novices and movie aficionados alike.

Hi Neil, now that the transcription is up for both parts I'll give these a read thanks (for others looking here for the first time Neil's link also provides a play button for the podcast itself). The earlier episodes look interesting too, not just 'creative' interviewees but technical and business too. Thanks for sharing your podcast with us and welcome to JWS!

What a great podcast and worth a listen for all sound mixer skill levels. The succinct explanation of adopted military terms used in all departments is a great way for explaining to greener clients why we all talk the way we do on a shoot. And my new favorite quote “marginal gains” - my new daily mantra. I mean, we all know it instinctively but here it was explained so well. Because of this podcast, i signed up for Aikido classes again after a 20yr hiatus. Curious how many members here study martial arts in some shape or form?

Great interview! Thanks for taking the time. Why is your podcast called the Apple and biscuit show? Clearly a very British thing but curious what the reference is.

Derek, I'll chime in here (I co-host the podcast). It's a reference to the STC 4021 microphone, which was a long-time stalwart of the BBC for sit down interviews; it sort of looks like an apple with a biscuit balancing on top, hence the name. We thought of calling it the STC 4021 Podcast; however, that seemed even more obtuse.

Also interested in the martial arts/sound connection as I used to practice Aikido myself but haven't been on the mat for some time (balancing life and work with a 2yr old in the house right now isn't conducive to those kinds of explorations regardless).
